Healthier, High Protein Date Square Bites
This healthier version of date squares is PERFECT for those with a sweet tooth like me!! They’re 10g of protein each and are so filling especially when eaten with greek yoghurt!
Ingredients (8 bites) :
Date filling :
225g pitted dates, finely chopped
1/2 cup water
1 tbsp lemon juice
1 tbsp sweetener of choice
1 tbsp syrup of choice
1/2 tsp baking soda
Add the chopped dates, water, lemon juice and syrup to a small pot. Bring to a boil, then lower the heat and add the baking powder.
Crumble :
7/8 cup quick oats
1/3 cup oat flour
2 scoops of our Vanilla Pure Whey Isolate Protein
1/2 very ripe banana
1 tbsp brown sugar
1 egg white
1 tbsp syrup of choice
1 tbsp butter
1/4 tsp baking powder
Preparation :
1. While the date filling is getting to a boil, mix all the ingredients for the crumble together in a separate bowl and mix until you get a thick cookie dough-like texture.
2. Grease 8 muffin tin cups and add a layer of crumble to each, followed by a layer of the date filling, and a last layer of crumble. top with sea salt (optional) and bake at 350°F for ~25 minutes or until golden.
