ORANGE & BLUEBERRY MUFFINS

Doesn't that sound so refreshing? This combo is the one for the summertime - it's light, fruity, and simply tastes like Summer. 

 

Ingredients (12 muffins)

  • 150g oat flour
  • 60g all purpose flour
  • 120g Limitless Pharma Smooth Vanilla Whey protein
  • 10g baking powder
  • 400g greek yoghurt
  • 2 eggs + 1/4 cup egg whites
  • 1/4 cup maple syrup
  • Juice of two oranges, zest of one
  • 2 cups frozen blueberries

 

Preparation

  1. Preheat oven to 350F ;
  2. In a large bowl, mix all the dry ingredients together ;
  3. Add the rest of the ingredients, excluding the blueberries and mix ;
  4. Fold in the blueberries ;
  5. Pour into a greased muffin mold ;
  6. Bake for 35-45 minutes ;
  7. Let cool and enjoy!
