Veggie Brownies

Two words : Vegetable. Brownies.

These are no joke (I made three batches in a single week). They’re high in protein, extra fudgy, and the best part? They’re made with veggies.

Literally a zucchini and a sweet potato are hidden in these gems! 


Ingredients (8-12 brownies) :

  • 1 large sweet potato
  • 1 large zucchini
  • 2 egg whites
  • 1 egg
  • 1 tbsp vanilla extract
  • 1 3/4 cups oat flour
  • 3/4 cup cacao powder
  • 1 tbsp baking powder
  • 3 scoops chocolate caramel whey @limitlesspharma
  • Toppings you like : i used dark chocolate and chopped macadamia nuts


Preparation :

  • Preheat oven to 350°F
  • Cook, peel and mash your sweet potato (poke holes with a fork, then microwave for 4 minutes, flip and microwave for another 4 minutes)
  • Wash and grate your zucchini
  • Mix all the wet ingredients together, and mix the dry ingredients in a separate bowl
  • Gradually add the dry ingredients to the wet ones
  • Cover a glass tin with parchment paper and add the batter, then add your toppings
  • Cook for 30 minutes
  • Let cool and enjoy!
