Veggie Brownies
Two words : Vegetable. Brownies.
These are no joke (I made three batches in a single week). They’re high in protein, extra fudgy, and the best part? They’re made with veggies.
Literally a zucchini and a sweet potato are hidden in these gems!
Ingredients (8-12 brownies) :
- 1 large sweet potato
- 1 large zucchini
- 2 egg whites
- 1 egg
- 1 tbsp vanilla extract
- 1 3/4 cups oat flour
- 3/4 cup cacao powder
- 1 tbsp baking powder
- 3 scoops chocolate caramel whey @limitlesspharma
- Toppings you like : i used dark chocolate and chopped macadamia nuts
Preparation :
- Preheat oven to 350°F
- Cook, peel and mash your sweet potato (poke holes with a fork, then microwave for 4 minutes, flip and microwave for another 4 minutes)
- Wash and grate your zucchini
- Mix all the wet ingredients together, and mix the dry ingredients in a separate bowl
- Gradually add the dry ingredients to the wet ones
- Cover a glass tin with parchment paper and add the batter, then add your toppings
- Cook for 30 minutes
- Let cool and enjoy!
