PUMPKIN SPICE COOKIES
Let's say it, pumpkin spice is not for everyone. However, it is THE flavour of fall, and being able to participate in the aesthetic is pretty fun. This pumpkin spice cookie recipe is perfect for you if you're not too much of a pumpkin enthusiast, but still want to fully immerse in the fall vibes. Oh, and if you love all things pumpkin spice, you can absolutely adjust the ingredients!
Ingredients (6-8 cookies)
- 1 cup pumpkin purée
- 2 tbsp peanut butter
- 1/4 tsp pure vanilla extract
- 1/2 whole wheat flour
- 1/2 cup oat flour
- 2 scoops Smooth Vanilla or Maple Brown Sugar whey or isolate protein
- 1 tbsp ground cinnamon (add more if desired)
- 1/2 tbsp ground ginger (add more if desired)
- 1/4 tsp salt
- 1/3 cup dark chocolate chips
Preparation
- Preheat oven to 350°F ;
- Mix the pumpkin purée, peanut butter and vanilla extract in a mixing bowl ;
- Add the dry ingredients (except the chocolate chips) and mix until well-combined ;
- Fold in the chocolate chips ;
- Line a baking dish with parchment paper and form 6-8 even cookies ;
- Bake for 20-25 minutes ;
