SWEET POTATO PROTEIN BITES

Looking for a sweet but healthy recipe you can snack on with absolutely NO guilt involved? These mini Sweet Potato Protein Bites are exactly what you're looking for. Made with simple, clean ingredients, these are the perfect treat to curb your sweet cravings while sneaking vegetables in!

 

Ingredients (16 bites)

  • 1 large sweet potato
  • 1/4 cup milk of choice
  • 1/4 cup unsweetened applesauce
  • 2 eggs
  • 1/2 cup oat flour
  • 1 scoop Maple Brown Sugar Isolate protein powder
  • 1 tsp baking powder
  • Pinch of salt
  • Chocolate chips (measure with your heart!)

 

Preparation

  1. Preheat oven to 350F ;
  2. Use a fork to poke holes in your sweet potato. Microwave it for 4 minutes on one side, flip, and microwave it for another 2-4 minutes. Let cool, then peel it and mash the flesh ;
  3. In a bowl, mix the sweet potato purée with the rest of the ingredients until fully combined ;
  4. Grease a mini muffin tin and seperate the dough evenly in each mold ;
  5. Bake for 15 minutes, let cool and enjoy!
